Slowly cooked at low temperature, with a fine and soft hunting flavour, also shows countryside traces due to the Geese roaming free-range raising at the “dehesa” with its pastures and acorn.
Remove from fridge some 15 minutes before tasting. That will allow a partial melt of the fat inside the meat fibres, to get a perfect texture and all the taste details. Spread on small toasts and sprinkle some salt flakes. If you want to enjoy our rillettes with a bit of marmalade or chutney, we recommend to avoid citric fruits and try apple, figs or more exotic mango.
