The Périgord black truffle is native to the Mediterranean regions of France, Italy, parts of Croatia, Serbia, and the greater parts of northern Spain. They are found at 250m-1000m above sea level and the season runs from late December until March, provided that the regions receive a good downpour in July and August to encourage the infant truffles to swell.
From the misty woodlands of the Périgord Noir, each black truffle is foraged by hunter and dog and carefully selected for aroma and quality. When lifted from the earth black truffles look like a lump of charcoal. The size varies from as small as a raisin to as big as an orange, although even larger specimens emerge. The skin is ink black with a reddish tinge (though this can indicate a lack of ripeness). The surface when washed is made up of tiny pyramids likened to diamonds fresh from the cutter. The inside is a deep chocolate colour, veined with tightly packed, caramel-coloured spore material that is as smooth as silk.
In the European Summer Months, Black Truffles are available from Chile and Australia and are every bit as good as their European counterparts.

Cooking with Black Truffles: This famed truffle is the prize ingredient of chefs everywhere. While you will find many connoisseurs have different opinions on the preparation of Black truffles, there are some universally respected precepts: Black Truffles are best if used when cooking a dish, and added towards the end as their aroma and flavour are long-lasting, and will seep into your preparation.
The French adore their Périgord diamond when used in scrambled eggs or an omelette, as eggs easily assimilate the subtle earthy flavour of black truffles. This is also a very easy way of using black truffles since it leaves almost no room for error. Most vegetables with clean, fresh flavours contrast nicely with the intensely pungent essence of truffles, especially celery root, leeks and cabbage.
Storage: All of our black truffles are supplied with notes on storage, cleaning, and preservation. Fresh black truffles should always be stored in a refrigerator. Each truffle must be wrapped individually in an absorbent paper, making sure that it always remains dry. To prevent the aromatic contamination of other foods, we recommend fresh black truffles be stored in an airtight container, always in the refrigerator. This method allows the preservation of black truffles for no more than five days.

All orders received before 3pm can be dispatched the same day unless a specific future date is selected using the date picker on the basket page of our website. We do not deliver on Sunday or Monday.
We send all of our shipments on an express overnight courier service, usually with DPD. We have a perishable account giving our parcels priority in their network. Should you not be at home at the time of delivery, the driver will try to find a safe place to leave your parcel and send you a notification. However, we do always encourage you to be in to receive your goods to ensure there is no risk of theft, for which we do not accept liability.
If your residence opens directly onto a pavement or you have a shared access it may not be possible for your driver to find a safe place in the event that you are out, in this case your parcel will return to the depot and one more delivery will be attempted the following day. After two unsuccessful delivery attempts, due to the perishable nature of the contents your parcel will be disposed of.

For the shipping fresh and frozen goods we use high quality mixed recyclable insulated packaging to keep your products perfect through the courier network.
To keep frozen goods at the correct temperature we use a safe alternative to dry ice. These gel packs freeze to a temperature of -45° and stay frozen for an extended period of time. Completely food safe and fully recyclable/reusable.
The vast majority of shipments arrive frozen but we cannot guarantee this. In the event that your order has defrosted it should still be at a very low temperature when you receive it and therefore fine to put in your freezer. Refreezing is only unsafe if the product has reached 8°c. It is worth mentioning that supermarkets routinely sell defrosted food as "fresh", with the advice that it may be frozen when you get home.
All frozen products arrive in extremely high quality, fully insulated packaging.
All fresh truffles are sent in a foil resealable pack with an absorbent paper. This is suitable for storing in your fridge. If storing truffles for more than a few days we recommend wrapping them in paper towel or using a Tuberpac. Fresh truffles are always best consumed as soon as possible.
