We carry king crab in three formats, each suited to different cooking applications and levels of effort.
Cooked Clusters
Pre-cooked legs and claws ready to eat. Reheat gently — steam for 4 to 5 minutes, or warm in a low oven wrapped in foil — and serve with melted butter, lemon, and good bread. Equally good served cold on a fruits de mer platter or alongside mayonnaise. No cooking judgement required; the work has already been done.
Raw Clusters
For the confident cook. Roasting, grilling and steaming all produce excellent results, and the raw cluster gives you full control over seasoning, finish and timing. Split the legs lengthways before cooking to allow butter, garlic and aromatics to penetrate the meat. Cooks quickly — over-cooking is the only real risk.
Raw Shelled King Crab — VAAG Seafoods
Raw king crab meat removed from the shell, sourced from VAAG Seafoods in Norway. This is a different proposition to the cluster format — pure meat, ready to cook, with no shell work involved. Ideal for pasta, thermidor, bisque, salads, dumplings, and any preparation where you want king crab flavour and texture without the structural presence of the shell.
We carry it in a couple of cuts and styles — leg meat, mixed body meat — each suited to different applications. Defrost overnight in the fridge and use within 24 hours of thawing.
Storage & Defrosting
All king crab is shipped frozen. Defrost overnight in the fridge on a plate or in a colander. Pat dry before cooking. Use within 2 days of thawing and do not refreeze.
