Bordeaux, France

Grape Varieties:86% Merlot 14% Cabernet Franc

Château Capet-Guillier is a small estate located to the south of Saint-Émilion, between Château Pavie and Château Magrez-Fombrauge. Previously owned by the same family since the French Revolution, it was acquired in 2009 by Antoine Moueix Propriétés, a négociant with over a century’s experience working in Bordeaux’s Right Bank. The wine is made by Stéphane Derenoncourt and Christophe Grenier, who produce this excellent Saint-Émilion Grand Cru from the estate’s four hectares of vines planted with Merlot and Cabernet Franc.

The estate vineyards, which have an average age of 45 years, are planted on chalk and clay, layered over limestone bedrock. This results in naturally low vine vigour, which concentrates the grape’s flavours. According to Stéphane Derenoncourt, the limestone component adds a spicy, floral character to the wines, while the south-facing aspect of the slopes aids ripening in difficult years. Harvest is carried out by hand and the Château has invested in an optical sorting machine, which measures the colour and form of each grape. Any grapes deemed to be damaged or unripe are automatically discarded.

Château Capet-Guillier is made from a blend of 86% Merlot and 14% Cabernet Franc. It undergoes a brief cold maceration before fermentation in 30-hectolitre conical oak vats. Aged for 12 to 16 months in 225-litre new oak barrels, the final wine offers a full-bodied, supple and intense expression, with notes of dark berry fruit and spice, fine-grained tannins and a long, complex finish.

The Merlot and Cabernet Franc grapes are grown near the village of Saint-Hippolyte on the southern slopes of the Saint-Émilion limestone plateau. The soil is composed of chalk and clay on limestone bedrock which results in naturally low vigour in the vines. The south-facing aspect of the vineyards aids ripening in difficult years. Harvest is carried out entirely by hand.

The 2018 vintage began with a very rainy spring and storms until mid-June. This proved to be important for water reserves as the summer saw heat and drought. Some light rain at the start of September allowed the fruit to attain excellent levels of ripeness while retaining a fresh quality. Early harvest allowed for the development of a remarkable and well balanced wine, despite higher levels of alcohol.

Upon arrival at the winery, the hand-harvested and de-stemmed grapes were sorted using an optical sorting table to ensure that only pristine berries made it into the wine. There was a short cold pre-fermentation maceration. Fermentation took place in 30 hectolitre, conical wooden vats, with manual cap punching three to four times a day. Malolactic fermentation took place in French oak barrels and vertical pressing was carried out prior to ageing and blending. The wine was then aged in 100% new 225-litre French oak barrels for 12 to 16 months.

This wine is a dark and intense ruby in colour. The nose opens with fresh raspberry and ripe strawberry interwoven with violet and vanilla. Well integrated barrel ageing supports the aromatic expression. On the palate, this wine has an unexpected strength and elegance and soft tannins.

The vast majority of frozen food shipments arrive frozen but we cannot guarantee this.  In the event that your order has defrosted it should still be at a very low temperature when you receive it and therefore fine to put in straight in your freezer.  Refreezing is only unsafe if the product has reached 8°c. It is worth mentioning that supermarkets routinely sell defrosted food as "fresh", with the advice that it may be frozen when you get home.

All fresh truffles are sent in a foil resealable pack with an absorbent paper.  This is suitable for storing in your fridge.  If storing truffles for more than a few days we recommend wrapping them in paper towel or using a Tuberpac.  Fresh truffles are always best consumed as soon as possible.
