Hailing from the renowned Darling Downs Farm in South Queensland, Australia, this incredible Wagyu tri-tip offers the very best in flavour due to intense marbling and quality rearing. The Tri-tip is a triangular shape roasting joint from the bottom of the sirloin, packed with flavour and a great way to enjoy wagyu at a fraction of the price of cut steaks.
Wagyu is lower in cholesterol than commodity beef and contains high percentages of omega-3 and omega-6 fatty acids. The marbling (known as Shimofuri in Japan) gives the beef a distinctively rich and tender flavour with a melt-in-the-mouth quality. Wagyu is also known for its sweet, full-bodied aroma (known as Wagyuko) which means when it’s cooked it smells amazing too.
Not all Wagyu is created equally and Darling Downs Farm produces some of the best Wagyu cattle outside of Japan. The beef is raised free-range and grain-fed and every mouthful is an unforgettable gastronomic experience.
Usage: For the best results, tri-tip needs to be reverse seared. This involves cooking it at a low temperature in an oven or over a low bbq, preferably a Green Egg, until the internal temperature of thickest part of the meat is 45°. Allow it to rest for 15-20 minutes before browning the meat in a hot pan or over a high flamed bbq or lump wood charcoal grill.
The tri-tip is very easy to work with and cooks very quickly, a watchful eye and meat thermometer are essential. When carving you will notice that the grain of the meat, meets at two separate angles so be sure to always slice across the grain for perfect results.
