One day a trapper from Great Northern Canada knocked over the salt into his pot of maple sugar. Not wanting to waste his precious sugar he used the mix on his dried bison meat. A great Quebec classic was born.
Trapper mix is made from maple sugar nuggets obtained from evaporating maple syrup at 123ºc. This syrup to Quebec is what the baguette is to the French.
It can be used as a flavoured salt with most things - with savoury dishes before or after cooking.It is excellent as a marinade for grilled meats.
