Located in South-West Madagascar, the salty marshes producing this tasty salt are found in Ifaty. The clay ponds are filled with seawater, which evaporates due to the sun and wind. This fleur de sel is so delicate that it's collected by hand to maintain its light, fluffy texture. Terre Exotique's exclusive recipe was inspired by traditional recipes from La Reunion, where local women roast a selection of spices before adding their personal touch. The spices used are similar to those used in curry: coriander, sesame, garlic, fenugreek, and cumin. When roasted, their aromas change and develop more complex flavours. Roasted cumin, for example, loses its bitterness to release woody notes.
