Acorn (bellota) is a highly caloric food that generates natural fat infiltration in the meat and liver of the goose. This fruit is only available from October to January, and when is ripe it falls on the ground. These are the same acorn rich in oleic acid that feeds the Iberian pig and generate its fat infiltration.

Laboudette geese are raised in freedom on big “dehesa” (acorn countryside areas) in Spain, in an extensive traditional system called “montanera”. They are fed on seeds, natural grass and the acorn that falls from the trees, so they generate an excellent quality slow-growth meat that slightly resembles hunting meat. The infiltrated fat lines inside the meat are part of the unique characteristics versus duck magret. Our geese do give us a natural, tasty, full of bellota aromas, a beautiful product.

Usage: Remove from fridge and plate some 15 minutes before tasting, leaving it at room temperature (25ºC) till consumption. This way you will get a partial melting of the infiltrated fat, that maximizes the flavours and gives a perfect texture. Lay the whole slices folded on small toasts. We recommend to enjoy next to a classic, well-aged and decanted red wine, like Bordeaux, Bourgogne, Rioja, Ribera del Duero, Toscana or Piamonte.

DELIVERY DATE SELECTION

All orders received before 3pm can be despatched the same day (Mon-Fri), unless a specific future date is selected using the drop down calendar on the basket page.

Next day delivery is not guaranteed so if you are ordering for a special occasion please chose delivery date a day in advance.

Saturday is a premium service and must be paid for accordingly.  If you do not pay for Saturday shipping we will despatch your order on the next working day (Monday), for delivery the following day (Tuesday).

We do not deliver on Sunday or Monday.

COURIERS

We send all of our shipments on an express next day courier service, usually with FedEx

On the day of your delivery you will receive an email confirming your parcel is due for delivery.

PACKAGING

For the shipping fresh and frozen goods we use high quality mixed recyclable insulated packaging to keep your products perfect through the courier network.

To keep frozen goods at the correct temperature we use a safe alternative to dry ice.  These gel packs freeze to a temperature of -45° and stay frozen for an extended period of time. Completely food safe and fully recyclable/reusable.

FROZEN PRODUCTS

The vast majority of shipments arrive frozen but we cannot guarantee this.  In the event that your order has defrosted it should still be at a very low temperature when you receive it and therefore fine to put in your freezer.  Refreezing is only unsafe if the product has reached 8°c. It is worth mentioning that supermarkets routinely sell defrosted food as "fresh", with the advice that it may be frozen when you get home.

All frozen products arrive in extremely high quality, fully insulated packaging.

FRESH TRUFFLES

All fresh truffles are sent in a foil resealable pack with an absorbent paper.  This is suitable for storing in your fridge.  If storing truffles for more than a few days we recommend wrapping them in paper towel or using a Tuberpac.  Fresh truffles are always best consumed as soon as possible.
