Premium Japanese Ingredients Online in the UK

FINE & WILD carries a curated selection of Japanese pantry essentials — soy sauces, miso, ponzu, mirin, rice vinegar, nori, rice, noodles, and other staples sourced from artisan producers in Japan. These are not the mass-produced Japanese ingredients found in supermarkets. The soy sauces are barrel-aged for years, the mirin is a genuine hon mirin aged for nearly two decades, and the rice is a named Koshihikari variety from a specific region. Every product in this collection has been chosen because it represents how these ingredients are supposed to taste when they're made properly.

Why These Products Are Different

The Japanese ingredients available in most UK supermarkets are industrial products — soy sauce brewed in weeks rather than years, mirin that's barely more than sweetened alcohol, and nori that tastes of very little. They work, but they don't deliver the depth, complexity, or authenticity that Japanese cooking depends on.

The products we carry are made by small producers using traditional methods. Our barrel-aged soy sauces are brewed by the Okada family — the 2-year aged has a rounded, balanced character; the 5-year aged is extraordinarily deep and complex, closer to a fine balsamic in its intensity and best used as a finishing condiment rather than a cooking ingredient. Our Black Hon Mirin is aged for eighteen years, developing a rich, syrupy sweetness with caramel and dried fruit notes that bear no resemblance to the thin, synthetic mirin sold in supermarkets. The Fujisu rice vinegar is aged for three years. These are ingredients where time is the defining factor — and time cannot be shortcut.

Sauces & Condiments

Beyond the aged soy sauces and mirin, we carry a range of Japanese sauces and condiments for everyday cooking and finishing. White shiro miso paste from Fukuoka — mild, sweet, and versatile for soups, marinades, glazes, and dressings. Ponzu in several varieties: Mikan mandarin ponzu (citrus-forward, excellent with sashimi and grilled fish), Kitoyuzu tomato ponzu (a more unusual pairing of yuzu and tomato), and Yuzu Kosho ponzu (yuzu with chilli heat). Yakitori sauce for glazing grilled skewers, and Yakiniku BBQ sauce for Japanese-style grilled meat. Kewpie mayonnaise — the Japanese original with its distinctive egg-yolk richness and umami depth.

Rice, Noodles & Dry Goods

Koshihikari rice from Toyama prefecture — one of Japan's most prized short-grain rice varieties, with a sticky, slightly sweet character essential for sushi and Japanese rice dishes. Gluten-free udon noodles with the proper thick, chewy texture. Ogawa soba noodles for cold or hot preparations. Gluten-free panko breadcrumbs made from Japanese rice — lighter and crispier than standard breadcrumbs, essential for katsu and tempura. Two grades of roasted nori: Ariake half sheets for everyday use and Sanpuku sheets for when quality matters most.

Fresh Wasabi & Dashi

We carry fresh wasabi root — the real thing, not the horseradish-and-colouring paste that passes for wasabi in most restaurants. Fresh wasabi is grated to order on a fine grater (traditionally sharkskin) and has a clean, fragrant heat that fades quickly — completely different from the harsh, synthetic burn of tube wasabi. It's one of the most misunderstood ingredients in Japanese cooking, and tasting the real thing for the first time is a revelation. Fresh wasabi also appears in our Seasonal Vegetables collection.

Yagisawa concentrated dashi provides an authentic Japanese stock base — rich in umami, ready to dilute and use in soups, noodle broths, simmered dishes, and as a foundation for countless Japanese preparations.

Delivery

Most products in this collection are ambient and shelf-stable — soy sauces, mirin, vinegar, noodles, rice, nori, and panko can all be stored in a cool cupboard. Fresh wasabi root and miso paste are perishable and should be refrigerated on arrival. All orders are shipped via express courier service — orders placed before 2 pm are dispatched the same day.
