This is not the dark, heavy-roasted sesame oil you find in most supermarkets. Wadaman's black sesame oil is something altogether different — light in body, subtle in flavour, and remarkably clean on the palate. It is made exclusively from the first pressing of organic black sesame seeds, with 5 kilograms of seeds required to produce just 1 litre of oil. Nothing is added, nothing is blended, and there is no second pressing.
The key to Wadaman's quality lies in their roasting. Every batch of sesame seeds passes through a six-step cleaning process before being roasted three times at different temperatures — low, high, then low again. This triple-roasting technique brings out the full depth of flavour while keeping the seeds perfectly round and evenly roasted to the core. The roasted seeds are then cold-pressed in small batches, producing an oil with a delicate nuttiness, gentle floral notes, and a clean, lingering finish that enhances rather than overwhelms.
This is a finishing oil. Use it where you want sesame flavour to be present but not dominant — drizzled over sashimi, carpaccio, steamed vegetables, or fresh tofu. It is also excellent in light dressings and vinaigrettes, and adds unexpected complexity to baking.
