Wines with acidity at the centre of them. Little or no oak, nothing softened, nothing rounded off — what you taste is citrus, stone, sea air and green fruit, and a finish that leaves your mouth clean and ready for the next bite.
This is the collection to shop when you're eating shellfish, oysters, raw fish, goat's cheese, or anything dressed with lemon or vinegar. Acidity is what cuts salt, fat and richness on the plate, and these are the wines built to do it.
Why we've split the whites this way
Most wine shops file white wine by grape or by country. That's useful if you already know what Chablis tastes like. It's no help at all if you're standing in the kitchen with a kilo of langoustines and a decision to make.
So we've split ours by what the wine does at the table. Crisp wines have acidity and cut. Rich wines have weight and texture. That gets you to the right half of the range in one step, working from what's on the plate rather than from a grape you may or may not know.
Delivery
Wine is shipped by express courier in protective packaging. Orders placed before 2pm are dispatched the same day, and you can choose your delivery date at checkout. Wine can be ordered alongside food in the same delivery. Weekday delivery is complimentary on orders over £225.
