Producer: Domaine William Fèvre is the largest owner of Grands Crus in Chablis — seventy hectares across ninety separate plots at the heart of the appellation. The estate has been farming with a strong environmental commitment for nearly two decades: organic practices since 2000, biodynamics across all Premier and Grand Cru parcels since 2010, and the first estate in Chablis to secure HVE3 certification in 2014. Full organic conversion of the entire domaine is set for 2025. Now part of the DBR Lafite family, the estate's character remains rooted in its terroir and the team that has worked it for a generation — Didier Séguier as director, François Ménin in the vineyard, Pascal Reynaud in the cellar.
The village Chablis is drawn from across the estate's holdings, vinified with the house signature: seasoned barrels rather than new oak, used on average six years, so the wood frames the wine without intruding. The Kimmeridgian limestone — fossilised oyster shell as much as rock — gives Chablis its mineral cut and characteristic freshness, and the village cuvée carries it directly. Green apple and citrus on the nose, lifted by white flowers and acacia; the palate is precise, taut, saline, finishing clean and stony. Chablis at its most honest.
