Salts
Salt is the first seasoning, and the one most often taken for granted.
Fleur de Sel from Île de Ré — the classic French finishing salt, hand-harvested from the surface of the salt pans, scattered at the last moment over almost anything. Viking Smoked Salt for grilled meats and vegetables. Persian Blue from ancient mines beneath Iran. Himalayan Pink and Black Salt for the mineral profiles and the colour. Each one tastes of where it came from, which is the point.
Peppers
Pepper is the world's most traded spice, and most of it is anonymous. Terre Exotique's are single-origin and freshly packed.
Black Madagascar is the benchmark — aromatic, pungent, properly balanced. Voatsiperifery, a wild pepper foraged from the forests of Madagascar, is the rarity — citrusy, floral, the heat coming in late. Penja White from Cameroon is smooth and earthy, essential in French sauces and anything pale. Plus green, pink, and a five-pepper blend.
A good grinder loaded with one of these is the simplest upgrade in any kitchen.
