HOW TO COOK TRISTAN DA CUHNA ROCK LOBSTER

PREPARATION - Shell Off Method

1. Bring a large pan of slightly salted water to a boil.

2. Place the lobster tails in groups of two into the boiling water and let them cook for 2 minutes.

3. Use a slotted spoon to remove the tails from the water and transfer them to a bowl filled with iced water to cool.

4. Once cooled, place the lobster tails shell side down on a cutting board.

5. With the assistance of sharp scissors, gently cut away the thinner underneath shell along the edges where it meets the thicker outer shell.

6. Carefully remove the flesh in one piece without causing any damage. Check for the visible "vein" (which is the digestive tract) running down the length of the tail and remove it if necessary.

Poach In Butter (Shell Off Method) Create the butter to poach the lobster using the Beurre Monte method.

Bring 100ml of water to a simmer in a small, heavy saucepan over medium heat. Reduce the heat to medium-low and gradually whisk in 100g of unsalted butter,  at peice at a a time, until the water and butter have emulsified. Keep the temperature between 60-70° (if the mixture boils, it will separate). Once all the butter is incorporated, add the lobster tails in a single layer. Poach them until they become opaque throughout, turning them every 1-2 minutes for about 5 minutes.

PREPERATION - Shell On Method

Depending on the style of dish you are hoping to create - in almost all cases the lobster tails are easier to cook/eat in the shell if they are split in half lengthways with a sharp knife. 

Grilled (Shell On) To grill lobster tails, start by preheating the grill to high heat. Take a large knife and split the lobster tails lengthwise. You can also brush the flesh with a marinade or garlic butter if you prefer. Once the grill is heated, place the lobster tails flesh-side up beneath the grill and cook them for 6/8 minutes. 

BBQ (Shell On)  Take a large knife and split the lobster tails lengthwise. You can also brush the flesh with a marinade or garlic butter if you prefer. Place the tails shell side down on the coolest side of the flames for 6/8 Minutes.
