Rich White Wines
Wines with weight and texture. Barrel fermentation, time on the lees, sometimes malolactic conversion — the winemaking is doing more here, and it shows in the mouthfeel. Hazelnut, orchard fruit, toast and cream, and a finish that coats rather than cuts.
This is the collection to shop when there's butter, cream or roasting involved. Lobster, turbot, scallops in a sauce, roast chicken, veal, mushrooms, hard cheese. Wines with enough body to sit alongside a rich plate rather than disappear under it.
Why we've split the whites this way
Filing white wine by grape or by country assumes you already know how those wines taste. It's no use standing over a roast Poulet de Bresse trying to work out what to open.
We've sorted ours by what the wine does at the table instead. Rich wines have body and texture. Crisp wines have acidity and cut. Start from what you're cooking and you're at the right half of the range straight away, without needing to know a Meursault from a Mâcon.
