Speciality Lamb
Lumina is a New Zealand programme bred specifically for eating quality — a lamb that is milder, sweeter, more refined than standard. Grass-fed on New Zealand pasture, all year.
We carry the rack, the loins, and the roasting joints — shoulder and leg.
Lumina
The rack roasts at high heat, pink at the centre, rested well. The loins are quick. The joints take either route — hot and fast, or low and slow — and reward both.
Freezing
All lamb is IQF frozen — flash-frozen at very low temperature so the ice crystals stay small enough not to damage the muscle. It defrosts to the same standard as fresh.
We freeze for two reasons. Quality, first. Waste, second. A frozen rack waits for the right Wednesday. A fresh one demands one.
Thaw overnight in the fridge, on a plate. Rest at room temperature for thirty minutes before cooking.
