Producer: Domaine William Fèvre farms seventy hectares across ninety plots in Chablis — the largest holder of Grand Cru in the appellation, with biodynamic conversion across all Premier and Grand Cru parcels since 2010 and full organic conversion of the estate completing in 2025. The house style is shaped by Didier Séguier and his team, who keep new oak out of the cellar: seasoned barrels averaging six years old are used instead, so wood supports the wine's frame without writing over its terroir. The result is Chablis that runs clean to the source — Kimmeridgian limestone, fossilised oyster shell, the cool slopes of the Serein valley.
Les Clos is the largest of the seven Grand Cru climats and, by long consensus, the finest — the climat against which all other Chablis is measured. South-west facing on pure Kimmeridgian marl over hard limestone bedrock, with steep slopes and old vines, it gives wines of remarkable depth and structure: tight in their youth, profound with age, capable of holding two decades or more. The Fèvre bottling shows the climat at its most complete — stone fruit and citrus framed by quince and acacia, the palate dense, mineral, taut, with a long flinty finish that holds. Grand Cru Chablis at its most serious.
