Producer: Domaine Les Ormousseaux works just under fourteen hectares of Pouilly-Fumé in the hamlet of La Roche, at Tracy-sur-Loire, on the Loire's right bank across the river from Sancerre. The estate's two principal parcels — Les Froids and Le Champ de l'Abreu — sit on an old flint quarry where roughly a thousand tonnes of silex were once removed. The soils that remain are ancient flint-clays from the Cretaceous: low-vigour, producing small compact bunches and tiny berries, with a directness to the terroir that the vineyard's location alone makes inevitable.
Clément Jolivet, born locally in Cosne-sur-Loire and from a long Sancerre and Pouilly-Fumé winemaking line, took over the estate in April 2021 and immediately began converting to organic farming. Fruit is whole-bunch pressed, the heart of the juice separated from the end of press to hold acidity, then cold-settled overnight before fermentation across stainless steel, 600-litre French oak and 220-litre Wineglobes — a deliberately varied cellar that gives depth and purity without over-marking the wine. Aged a full year on fine lees. Grapefruit, white blossom and flint on the nose; the palate carries the parcel's signature tension and minerality, lifted by a hint of white pepper, finishing long and crisp with the smoky note the appellation takes its name from.
