Producer: Domaine William Fèvre farms seventy hectares across ninety plots in Chablis — the largest holder of Grand Cru in the appellation, with biodynamic conversion across all Premier and Grand Cru parcels since 2010 and full organic conversion of the estate completing in 2025. The house style is shaped by Didier Séguier and his team, who keep new oak out of the cellar: seasoned barrels averaging six years old are used instead, so wood supports the wine's frame without writing over its terroir. The result is Chablis that runs clean to the source — Kimmeridgian limestone, fossilised oyster shell, the cool slopes of the Serein valley.

Bougros sits at the western end of the Grand Cru hill above the Serein, the first climat reached from the river. South-west facing on classic Kimmeridgian marl, with steep slopes that drive concentration and depth, it produces wines of generous fruit and full body — the most opulent of the seven Grand Cru climats, structured for the long haul. The Fèvre bottling carries it with quiet conviction: ripe stone fruit and citrus lifted by hazelnut and acacia, the wine fleshier than its village and Premier siblings but cut through with the same mineral line, finishing long and saline. Grand Cru Chablis made for the table, built to age a decade or more.
