Sesame is made or unmade by roasting, and roasting is Wadaman's whole craft. The seeds are cleaned and sorted in stages, then roasted right through to the core — black sesame handled differently from white or golden, each read for its oil content — so the flavour comes out deep and even rather than scorched or raw. It is the step that separates a good sesame seed from a remarkable one.

Black sesame — kuro goma — roasted to draw out its full character: deep, thick and intensely nutty, more robust and aromatic than white sesame, with a faint, pleasant bitterness and a definite crunch. The seeds arrive already roasted and ready to use, the aroma at its peak.

Scatter them over rice, salads, noodles, steamed or roasted vegetables and grilled fish, or grind them — in a suribachi or mortar — into a goma-ae dressing or a gomashio with salt. Black sesame is also a classic in sweets, so they're as at home stirred through yoghurt, sprinkled over ice cream, or worked into mochi, cookies and cakes. A few seconds in a dry pan will lift the fragrance again if you like; keep them somewhere cool and dark.

Producer Wadaman has specialised in sesame in Osaka since 1883 — five generations of one family. The seeds are sourced from some of the world's finest growers, then sorted, cleaned and roasted in-house, each variety roasted differently to suit it. The fourth-generation master, Etsuji Wada, has roasted personally for more than forty years and is widely regarded as Japan's finest sesame roaster. Wadaman has held organic certification since 2002.
