Edamame are soya beans harvested young, while the pod is still green and the bean inside is soft. Left to mature, the same bean dries and hardens into the commodity soya that becomes tofu, oil and miso. Picked early, it is a different ingredient altogether — firm, faintly grassy, mildly sweet. Mukimame is simply the shelled version: pods removed, beans only.
Frozen, they are among the more useful things you can keep to hand. They cook from frozen in a few minutes and hold their bite, which makes them equally at home folded through rice, scattered over a salad, dropped into a bowl of noodles at the last moment, or blitzed with lemon and olive oil into a rough purée. Salt is largely all they ask for.
Please note, from time to time the beans will arrive to you partially thawed. It is perfectly fine to place these into your freezer, even if partially thawed, and use when needed.
