These are not a gluten-free compromise — they are a genuine improvement on standard panko in several respects. Made entirely from Japanese uruchi rice with no wheat flour, no shortening, no trans fats, and no additives of any kind, Wa Panko breadcrumbs produce a coating that is lighter, crispier, and absorbs approximately 40% less oil than wheat-based panko. The crispy texture holds up even after cooling, which makes them particularly good for bento boxes and any dish that will not be eaten immediately.
Traditional panko gets its distinctive flaky, jagged texture from a bread that is baked using electrical current rather than conventional heat, then dried and shredded. Wa Panko adapts this technique for rice flour, producing breadcrumbs with the same angular, open structure that creates maximum surface area for crunch. The result is a panko that fries to a lighter golden colour than wheat versions — be careful not to overcook, as the colour develops more slowly.
This was the first gluten-free panko to reach the market, and it remains one of the best. Halal certified and produced in an FSSC 22000 certified facility.
