Urbani's signature mushroom and truffle sauce — a blend of champignon mushrooms and summer truffle breakings (Tuber aestivum Vitt.) cooked in extra virgin olive oil with garlic, salt, and black pepper. This is Urbani's best-selling truffle product worldwide, and for good reason: it delivers genuine truffle flavour in a jar that is ready to use, versatile, and goes a long way. A teaspoon stirred through hot pasta is enough to transform the dish.
The base is 54% champignon mushroom, which provides body and umami, with 8% summer truffle adding the distinctive earthy, aromatic character. The texture is a rough, spreadable paste — not smooth, not chunky — with visible pieces of truffle and mushroom throughout. The colour is dark, almost black, partly from the sepia ink used in the recipe, which also adds a subtle depth of flavour.
This is a storecupboard staple. Stir it through pasta, spread it on crostini, fold it into risotto, use it as a base for a cream sauce, or add a spoonful to scrambled eggs. It also works well as a finishing element on grilled meats and fish, or mixed into mashed potato for a truffle-scented side.
