Wild Asparagus

Sale price£9.50
Net: 180g Thinner, more intense and nuttier than cultivated asparagus

Wild foraged asparagus from Italy — Asparagus acutifolius, not cultivated. Thin green spears with a more concentrated, slightly bitter, grassy flavour and a nuttiness that farmed asparagus lacks. Short season, limited availability.

Wild asparagus (Asparagus acutifolius) — thin, green spears foraged in Italy. These are not cultivated asparagus (Asparagus officinalis) — they are a different species entirely, found growing wild in scrubland, hedgerows and rocky ground across the Mediterranean. The spears are much thinner than farmed asparagus, typically pencil-width or finer, and the flavour is more concentrated: a more intense, slightly bitter, grassy asparagus character with a firmer texture and a nuttiness that cultivated asparagus lacks.

Wild asparagus has a short season and is foraged rather than farmed, which means availability is limited and supply is not guaranteed. The spears vary in thickness and length — this is a wild product and it looks like one. Use quickly after receipt — wild asparagus does not keep as well as farmed asparagus and is best eaten within a day or two.
