These premium forced rhubarb stems develop a remarkable natural sweetness and subtle complexity that requires 40% less sugar in cooking than standard rhubarb. The unique forcing process creates stems of extraordinary quality—tender, delicate, and free from the stringiness found in ordinary varieties.
Poach gently with vanilla and minimal sugar to preserve the delicate flavour, or slice thinly and serve raw with sweet dishes. The tender stems also make exceptional compotes, sorbets, and sophisticated seasonal desserts.
