This exceptional Basque Red Corn Polenta is crafted from a revived heritage grain variety native to the Basque region. Towering taller than conventional yellow corn, this rustic red variety produces uniquely flavoured grains that have been carefully preserved and cultivated to maintain their distinctive character and cultural significance.

This polenta offers a remarkable depth of flavour with subtle nutty undertones and a distinctive rustic texture that connects directly to Basque culinary heritage. The vibrant reddish hue provides stunning visual appeal while the corn's natural character creates a richer, more complex polenta than those made from conventional varieties. Each batch represents generations of agricultural tradition and the successful revival of a nearly-lost crop.

Prepare traditionally by slowly stirring into simmering water (ratio 1:4) for approximately 45 minutes until it reaches your desired consistency. Producer: IRAZABAL BEHERIA is part of a dedicated cooperative of French Basque farmers who, 25 years ago, began collecting and reviving this heritage corn variety from monasteries, conservatories, and botanical gardens where the last remaining grains were preserved. Their commitment to tradition culminated in commissioning a mobile mill, ensuring each producer maintains complete control of their production from field to finished product.
