Arborio is the most widely used risotto rice in Italy, and for good reason. Its grains are the largest of any Italian rice variety, with a high starch content that releases gradually during cooking to produce the characteristic creamy consistency that defines a good risotto — while the centre of each grain retains a firm, satisfying bite. This organic arborio is grown in the province of Vercelli in Piedmont, one of the most celebrated rice-growing regions in the world, where abundant water from the Alps irrigates the paddy fields of the Po Valley.
Cascina Belvedere is a family business that has been growing and processing rice in Vercelli since 1935 — one of the few Italian producers that controls every stage from seed to packaging. The rice is cultivated using certified organic farming methods, processed in small batches to preserve nutritional content and flavour, and vacuum-packed for freshness. The traditional stone husking and meticulous selection process ensure that imperfections remain below the threshold required for Italy's "Extra Quality" classification. The result is a rice with a clean wheat-like flavour, consistent grain size, and a cooking performance that mass-produced arborio cannot match.
