Premium chicken thighs from heritage breed birds raised by Pascal Cosnet in France's countryside using traditional methods that have made these chickens the favourite of France's three-star Michelin restaurants. These free-range birds from slow-growing breeds including Gauloise are raised on over 6 hectares of grassland with free access to their buildings, creating exceptional meat quality through natural rearing.
The birds are fed cereals grown on the farm — maize and wheat form the base diet, enhanced with essential oils and over twenty-five wild plants gathered from protected natural sites. These include dandelion, heather, bramble, nettle, and horsetail, selected for their remineralising and tonic properties. Each bird is refined before slaughter with a week-long finishing process using five selected plants and their decoctions, creating fine, flavourful meat with perfectly distributed fat.
This finishing process gives the meat its distinctive "organic" character and contributes to the proper functioning of the birds' systems. The result is exceptionally tender meat with a unique flavour profile that reflects the terroir and traditional methods used in its production.
Producer: Pascal Cosnet raises heritage poultry at Patis farm using ancestral methods. His birds roam freely on extensive grasslands and receive natural diets supplemented with wild plants gathered from protected sites. The La Cour d'Armoise brand represents the pinnacle of French poultry craftsmanship.

Storage: Keep frozen until ready to use. Our chicken arrives fresh, is expertly butchered, and blast frozen at -30°C to preserve quality and texture. When delivered, it will be frozen — store in freezer for later use, or defrost in refrigerator where it will stay fresh for 2-3 days.
