Small, soft, ready-made blinis from Dom Petroff — the traditional base for serving caviar. These are crème fraîche blinis: richer and slightly more tender than a standard blini, with a gentle tang that complements rather than competes with whatever goes on top. Each pack contains 16 pieces, enough for a generous caviar service for two or a canapé spread for four.

Blinis are the classic Russian accompaniment to caviar, and for good reason — they provide a soft, neutral platform that carries the roe without interfering with its flavour. A small dollop of crème fraîche on the blini, a spoonful of caviar on top, and you have the most traditional caviar serve there is. These Dom Petroff blinis are made to the same standard as their caviar — produced in France to a consistent recipe, ready to serve straight from the pack or after a brief warm in the oven.

Beyond caviar, these blinis work well as a base for smoked salmon with crème fraîche and dill, taramasalata, salmon roe, or any canapé topping where you want something softer and more refined than toast or crackers.

Serve the blinis at room temperature or lightly warmed. To warm, place them on a baking tray in an oven preheated to 150°C for 3–4 minutes — just enough to take the chill off and soften the texture without drying them out. Do not toast or crisp them; the point of a blini is its softness.

For a classic caviar serve, place a small dollop of crème fraîche on each blini and top with a spoonful of caviar. Use a mother-of-pearl or non-metal spoon to handle the caviar. Arrange on a serving plate or board and serve immediately.

For smoked salmon canapés, lay a small piece of smoked salmon on each blini, add a touch of crème fraîche, and finish with a sprig of dill or a few capers. For salmon roe, the method is the same as for caviar — crème fraîche first, then roe on top.

Allow roughly 4 blinis per person for a caviar tasting, or 2–3 per person if serving as part of a wider canapé selection.
