La Maison Mayté Ibïama pigs are 100% born and bred in the Basque country. Benefitting from the exceptional local climate (a mix of the salty Atlantic and the Pyrenean mountain air), the pork of this passionate producer offers incomparable flavours.
The Ibïama pig has a long history; only three farms rear this breed of pig, which can adhere to the stringent husbandry requirements. Controlled by an independent governing body, they are fed a strict cereal-based diet, GMO and antibiotic-free, with a darker colour than usual pork.
They reach a maturity weight of 180kg to 220kg when the meat has its highest succulence. The size and age of these animals mean that they yield fresh meat presenting a real depth of flavour alongside the melting tenderness. The meat has a smooth-grained texture and is marbled throughout.
