Label Rouge is a production method based on an approved specification that respects animal welfare and protects the environment. Since 1960, Label Rouge poultry has been reared using traditional, free-range production methods based on an official Label Rouge specification approved by the French public authorities.
These special production methods ensure the poultry’s welfare and protect the environment whilst producing meat with superior organoleptic properties that only Label Rouge can guarantee.
Label Rouge traditional poultry are free-range birds raised in the open air and allowed to roam free all day. The difference between birds that are reared in the open air and those that are reared in total freedom is Birds raised in the open air are reared in outdoor pens in which they must have at least 2m² of ground space per bird, whereas if they are allowed to run free, they can roam anywhere because there are no fences.
Due to their 'roam-free' nature Label Rouge chickens have a firmer texture than traditional chickens and suit roasting at a lower temperature over a longer period.
