Slowly cooked at low temperature, with a fine and soft hunting flavour, also shows countryside traces due to the Geese roaming free-range raising at the “dehesa” with its pastures and acorn.

Tasting: Remove from fridge some 15 minutes before eating to allow a partial melt of the fat inside the meat fibres, to get a perfect texture and all the taste details. Spread on small toasts and sprinkle some salt flakes. If you want to enjoy our rillettes with chutney, we recommend avoiding citric fruits and try apple, figs or more exotic mango.
