CLASE AZUL MEZCAL DURANGO
This mezcal is artisanally made with cenizo agave endemic to the semi-arid highlands in the state of Durango in Northern Mexico. Shaped by the climatic extremes of Northern Mexico’s little-explored highlands, this icon possesses a singular richness mirrored by its striking decanter.
Brilliant and crystal clear, this full-bodied Mezcal offers Citrus and herbal fragrances, smoked wood, cooked agave, and clove. The herbal front has warm notes of chocolate and smoked wood, with hints of clove and quince marmalade.
Tequila Categories
Tequila is a spirit made from the blue agave plant, primarily in the area surrounding the city of Tequila in the west of Mexico. The beverage is categorized mainly based on ageing time, leading to different flavours, aromas, and complexity. The main categories include Blanco (or Silver), Reposado, Añejo, and Extra Añejo.
Mezcal vs Tequila: Mezcal encompasses a broader category of Mexican spirits distilled from the fermented sap of agave plants. Tequila, a specific variant of mezcal, is exclusively produced from blue Weber agave and primarily crafted in the state of Jalisco—the heartland of Tequila production—as well as in certain other regions that have been officially designated for its production.
Blanco Tequila: This is the purest form of tequila, as it is bottled or stored immediately after distillation or aged less than two months in stainless steel or neutral oak barrels. It showcases the raw flavours of the agave and tends to have a strong, clear taste.
Reposado Tequila: Reposado translates to "rested" in Spanish. Reposado tequilas are aged in wood barrels (often previously used to age bourbon) for a period between two months and one year. This ageing process mellows the taste of the agave, infusing the tequila with wood flavours while smoothing its sharp edges. It balances the bold flavours of a Blanco and the more complex notes of aged tequila.
Añejo and Extra Añejo Tequila: These are aged for even longer periods, with Añejo aged for one to three years and Extra Añejo for more than three years. The extensive ageing process introduces deeper wood flavours, greater smoothness, and complexity, making them prized for their sophisticated taste profiles.
To summarize, Reposado is a type of tequila that differs from others primarily in its ageing process and resulting flavour profile. It rests in a sweet spot between the spirited Blanco and the more mature Añejo and Extra Añejo. It offers a unique balance of agave purity and the complexity conferred by the ageing process.
