This 2017 vintage pinot noir from Tollot-Beaut is made with grapes harvested in the Chorey-Lès-Beaune region. The wine is rich and intense, with bold fruit notes and a herbaceous depth.
Tollot-Beaut destems all their Pinot Noir and ferments it in stainless steel tanks for 10 to 12 days, with pigeage taking place twice daily. They use oak subtly to season the wines and amplify their delicate fruit character. The wines are aged in barrels for 16 to 18 months, with up to 20% new oak used for the village and regional wines and 50% new oak for the Grand Crus. Tollot-Beaut's cellars are cooler than most in Burgundy, with a temperature of 14°C, which helps preserve the fresh fruit character of the wines.
