Producer: Domaine Jean Defaix stands as one of Chablis' most respected family estates, with roots stretching back to 1959. The domaine's philosophy centres on expressing the pure terroir of their premier cru vineyards through minimal intervention winemaking. Their Cote de Lechet vineyard, positioned on the left bank of the River Serein, benefits from optimal south-facing exposure and the region's characteristic Kimmeridgian soils, rich in fossilised oyster shells that impart the distinctive mineral backbone Chablis is renowned for.
Vintage: The 2022 vintage in Chablis proved exceptional, with a warm, dry summer following a mild spring that encouraged healthy vine development. Despite challenging heat spikes in July, the cool nights preserved essential acidity whilst concentrating flavours. Harvest began in early September under ideal conditions, producing wines of remarkable balance with intense minerality and vibrant freshness that perfectly captures the essence of this premier cru site.

All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
