The Cellar

Some wines are bought to drink. Others are bought to keep. The bottles in this collection sit in a category of their own — the ones with declared vintages, waiting lists, and labels that need no introduction to anyone already looking.

What's here is curated, not fixed. The names rotate with what we can buy at the right price and vintage, and the line-up reflects that. What doesn't change is the standard: First Growths and their Right Bank equals from Bordeaux, grower Burgundy from the Côte d'Or, the great single-cuvée wines of the Rhône, the Super Tuscans that rewrote Italian wine, the founding estates of Napa, and the Argentine vineyards that earned a seat at the table.


Bordeaux

The backbone. Pauillac, Saint-Émilion, Saint-Julien, Saint-Estèphe, Pessac-Léognan, Pomerol. First Growths when they're available. Premier Grands Crus Classés. The Fourth and Fifth Growths that drink above their station in the right vintages. Second wines from First Growth estates — among the smartest buys in the cellar, particularly in declared years.


Burgundy

Grower-producer Pinot Noir from the Côte d'Or. Village, Premier Cru, occasionally Grand Cru. We focus on domaines rather than négociants — the wines that taste like the vineyard they came from rather than the cellar they were assembled in.


Rhône

The single-cuvée wines that built the region's reputation. Hermitage from the granite slopes above the river, Châteauneuf-du-Pape from the founding estates of the southern Rhône — Syrah and Grenache at the highest expression each grape achieves.


Super Tuscans

The Italian reformation. The wines made when the great Tuscan estates threw out the DOC rule book in the 1960s and 70s and started planting Cabernet and Merlot alongside Sangiovese. Bolgheri, the Tuscan coast, and the renegade cuvées from Chianti Classico that followed.


Napa & California

The estates that built California fine wine. Oakville, Calistoga, Mount Veeder — old vineyards, established programmes, and the long arc of Napa Cabernet from the 1976 Paris tasting onward.


Argentina

Single-vineyard Malbec and high-altitude Cabernet Franc from Mendoza — the wines that proved South America belongs in this company.


Drink Or Hold

A legendary wine is a wine that outlives the meal it's drunk with. It rewards cellaring, it appreciates with age, and — in good vintages from the right estates — it can be sold for more than it was bought for. The decision is the buyer's.
