Salsus is a Norwegian producer that makes stocks and demi glaces for professional chefs. Their products are slow-cooked from fresh Norwegian raw materials — vegetables, herbs, meat, fish, and dairy — with no additives or flavour enhancers. The recipes are developed in collaboration with some of Norway's leading chefs, and the quality is immediately apparent: these stocks have genuine body, clean flavour, and the natural gelatin content that comes from proper long-cooking of bones and aromatics.

Stock vs Demi Glace — When to Use Which
This is an important distinction. Salsus stocks are seasoned and ready to use as they are — as the liquid base for soups, risottos, braises, poaching, and any recipe that calls for stock. They are not designed to be reduced down into sauces. Reducing a seasoned stock concentrates the salt and seasoning, which quickly becomes overpowering.
For sauce-making, use the demi glaces. A demi glace is a concentrated, reduced stock — already intensely flavoured with a thick, glossy consistency. It's designed to be the foundation of pan sauces, gravies, and classical French sauces. A spoonful of beef or chicken demi glace deglazed into a hot pan after searing a steak or roasting a chicken produces a restaurant-quality sauce in minutes. This is the single most useful product in the collection for elevating everyday cooking.
