TRADITIONAL TOULOUSE
Origin: France
Traditional Toulouse sausages are the classic ingredient in cassoulet, that hearty bean, confit and pork extravaganza that is a hallmark of any self-respecting French cook's repertoire. These authentic Toulouse sausages are all pork and are minced by hand rather than ground, offering a coarser texture that delivers superior flavour and a satisfying bite that sets them apart from standard sausages.
The hand-cut pork creates a rustic, chunky texture that holds its shape beautifully during slow cooking, whilst the traditional French spice blend provides subtle seasoning that enhances rather than overpowers the quality pork. With 95% pork content, these sausages deliver genuine meaty flavour.
Essential for authentic cassoulet, simply brown in a pan before adding to your bean and confit duck pot. Also excellent grilled or pan-fried and served with lentils, roasted with root vegetables, or sliced into hearty stews. One sausage is plenty for one person.
Producer info: Crafted by traditional French charcutiers who maintain the authentic hand-mincing technique that has defined Toulouse sausages for generations, ensuring each sausage meets the exacting standards of this regional speciality.
Net weight: 650g (4 extra-large sausages)
Allergens: Produced in an area that uses flour, eggs, milk

Order Cut-Off Times & Delivery Date Selection
Orders placed before 2 PM (Monday to Friday) are dispatched the same day, unless you select a future delivery date at checkout.
Our Delivery Service
We use reliable third-party express courier services and high-quality insulated packaging. While our couriers are generally excellent, occasional delays can happen. We pack everything to stay fresh, even if transit takes a little longer.
Time-Sensitive & Event Orders
Can we guarantee delivery on a specific day? Unfortunately not - we rely on third-party couriers and can't control their schedules. All items leave us in perfect condition with good use-by dates, but final timing depends on the courier.
If your order is for a specific event, let us know in the notes section at checkout. We can often dispatch a day earlier to give you the best chance of timely arrival.
DELIVERY Changes After Dispatch
Once dispatched, your package is with the courier and we're unable to redirect it or change delivery details.
Saturday Delivery
Saturday delivery is available, though please note our couriers don't operate phone support at weekends and our office is closed. For event-critical orders, a weekday delivery gives us more flexibility to help if any issues arise.

TOULOUSE SAUSAGE & DUCK CASSOULET WITH NDUJA CRUMB
Traditional cassoulet is a slow-cooked French dish with pork, duck or goose confit, Toulouse sausage, and white beans. Everything cooks together for hours, creating a hearty but heavy meal.
This lighter version keeps the comfort but adds fresh flavors to balance the richness. It uses Toulouse sausages and duck confit (or just sausages alone). The key difference: each ingredient is cooked separately to preserve its individual flavor, rather than everything stewing together.

TOULOUSE SAUSAGE & TOMATO SALAD
This truly delicious recipe makes for a perfect laid back summer lunch to be enjoyed over a bottle of red wine. We have used Toulouse sausages in this recipe, however other good quality sausages will also work well. It is also possible to supplement the salad onions for other onions such as Roscoff, red onion or shallot.
