Smoked Pancetta Praga from Levoni — a premium Italian smoked pancetta, seasoned with white pepper, cloves, nutmeg, coriander, and juniper, then smoked over woods from the Trentino Alps and slowly matured. When sliced, the lean is a clean pink with pearly-white streaks of firm fat running through it, and the outer rind has the biscuit colour of a proper Alpine smoke. The flavour is sweet, aromatic, and gently smoky, with a soft, yielding texture that sets it apart from harder, drier pancetta.

Levoni was founded in 1911 in Castellucchio, near Mantua, and is now in its fourth generation. They combine traditional Italian charcuterie methods with a production standard that has made them one of Italy's most respected salumi houses. This pancetta is made without added glutamates or MSG — the flavour comes from the spice blend, the quality of the pork, and the smoke.

This is a versatile ingredient. Slice it thinly for a charcuterie board, dice it into lardons for pasta sauces and carbonara, wrap it around asparagus or fish before roasting, or fry it crisp and crumble it over salads. It is the kind of product that earns a permanent place in the fridge.
