When to drink: Ready to enjoy now and will continue to develop beautifully over the next 15-20 years. This vintage-dated Pedro Ximénez shows exceptional concentration and complexity in its youth whilst possessing the structure for extended cellaring.
Tasting: Brilliant clear amber colour with aromas of preserved fig, orange zest and dark chocolate preparing the palate for intense flavours of dried black currant, caramel, candied orange and hints of coffee bean. This luscious wine is syrupy on the palate with rich dried fruit nuances and toasty hints, enhanced by fresh overtones and rosemary honey. A bold line of acidity keeps it remarkably fresh from first sip to the extraordinarily long finish, displaying the pure essence of sun-dried Pedro Ximénez raisins.
Pairing: This exceptional dessert wine pairs beautifully with Sturia Oscietra Caviar, where the wine's sweetness creates a sublime contrast with the caviar's salinity. Excellent with aged Parmigiano Reggiano or Grana Padano DOP, whilst its rich complexity complements premium chocolate desserts. The wine's intense sweetness and acidity make it perfect with Blue Cheeses or serve alongside premium vanilla ice cream with White Truffle shavings for an extraordinary dessert experience.
Producer: Founded in 1729 by Diego de Alvear y Escalera, Bodegas Alvear is the oldest winery in Andalusia and among Spain's most historic producers. Now in its eighth generation of family ownership, Alvear has remained true to its roots whilst pioneering innovations in Pedro Ximénez production. Located in the heart of Montilla-Moriles, the bodega owns 300 hectares of prime vineyard land in the Sierra de Montilla, where the Pedro Ximénez grape thrives in the region's albariza soils rich in calcium carbonate. Their Pedro Ximénez de Añada was the first vintage-dated PX sweet wine ever released in Montilla-Moriles history.
