Sand Carrots, known as Carotte de Créances or Carotte de Sable in French, are a refined French vegetable highly favoured by chefs for their superb flavour and near-perfectly straight shape.
Sand carrots originate from Normandy, specifically in eight villages near the Créances basin. This region has been dedicated to cultivating this crop since the 19th century and was officially recognised with AOC (Appellation d'Origine Contrôlée) status in 196. The farmers cultivate these carrots in long, narrow fields with sandy soil enriched with seaweed over generations, resulting in soil rich in iodine and sulfur.
The carrots are typically stored in soil, often shielded by a layer of straw, and are only harvested when required for sale. They are sold unwashed to retain their distinct flavour profile.
For a delicious way to cook Sand carrots, try braising them whole. Start by rinsing them in cold water, drying, then peeling the skins (they can also be cooked with the skin on).
Preheat your oven to 160°C.
In a large non-stick saucepan with metal handles, heat a little olive oil over medium heat. Add the carrots and roast until they turn golden.
Next, add a knob of butter and continue roasting for 2-3 minutes, turning them frequently. Then pour in a cup of water, swirl the pan to mix, and cook until half of the water evaporates, creating a buttery braising liquid.
Cover with greaseproof paper and bake in the oven for around 15 minutes until the carrots are beautifully golden and cooked al dente.
Keep the carrots in the cooking liquid and reheat before serving.
