Maitake means “dancing mushroom” in Japanese. Stories say this name arose when people would find this mushroom in the wild, and become so happy they’d start to dance! They’re one of the most popular mushrooms in Japan and China for both their delicious taste and reported medicinal qualities
Maitake mushrooms grow in clusters of flattened brown caps with white edges. The name “hen of the woods” comes from the fact that the cluster of mushrooms somewhat resembles the ruffled feathers of a sitting hen.
Maitake mushrooms have a robust, earthy flavour with a firm, meaty texture that holds well during cooking. Their complex taste profile combines woodsy notes with a subtle umami richness. The overlapping frond-like structure provides an appealing visual element whilst offering excellent sauce absorption.
Preparation: Break into smaller clusters and brush clean gently. Excellent roasted whole with olive oil and herbs, or sautéed with garlic and butter. Their substantial texture makes them ideal for grilling, adding to pasta dishes, or using as a vegetarian substitute in hearty stews. Pairs well with Asian flavours - try in stir-fries with soy sauce and ginger.

Can we guarantee delivery on a specific day? Unfortunately not - we rely on third-party couriers and can't control their schedules. All items leave us in perfect condition with good use-by dates, but final timing depends on the courier.
If your order is for a specific event, let us know in the notes section at checkout. We can often dispatch a day earlier to give you the best chance of timely arrival.

Saturday Delivery
Saturday delivery is available, though please note our couriers don't operate phone support at weekends and our office is closed. For event-critical orders, a weekday delivery gives us more flexibility to help if any issues arise.
