Fresh cauliflower mushrooms are a cultivated Asian variety with a distinctive, ruffled coral-like structure in creamy white. Their intricate, layered form makes them visually striking on the plate, and their texture is unusual among mushrooms — tender, slightly springy and with a gentle chew that has been compared to al dente egg noodles. The flavour is deliberately mild and subtly nutty, designed to absorb and carry the surrounding flavours in a dish rather than compete with them.

This absorbent quality is what makes cauliflower mushrooms so useful in the kitchen. They excel in broths and soups, where they soak up liquid and take on the character of the stock around them while contributing their distinctive texture. They work well in stir-fries and Asian-inspired preparations, hold together in curries and braises, and can be battered for tempura.
