A traditional Salentine passata from Perché Ci Credo — the artisan producer based in Lecce, in the heel of Puglia, working with the sun-grown tomatoes of the Salento. Two ingredients only: Italian tomatoes and salt. That is the entire recipe. No preservatives, no concentrate, no additives, no colourings, no acidulants — just whole fresh tomatoes, harvested at peak ripeness, milled and bottled the same day to capture the flavour at its absolute height. The word fresca (fresh) in the producer's own naming matters: this is passata made from fresh tomatoes rather than reconstituted from stored or partially processed product, which is almost everything else on the UK retail shelf.

The Salento is one of the great tomato-growing regions of Italy. The combination of intense southern sun, low rainfall, sea breezes from the surrounding Adriatic and Ionian, and mineral-rich soil gives Salentine tomatoes a concentration of flavour and a natural balance of sweetness and acidity that more humid Italian regions cannot match. That character — bright, sweet, deeply tomato-forward, with a clean clear finish — is what comes through in the bottle. Used as the base of any sauce that calls for passata, this is the difference between a dish that tastes of tomato and a dish that tastes of concentrate.
