Despite their rather sombre name, these remarkable wild mushrooms are anything but deathly - quite the opposite, they're considered a true delicacy by foragers and chefs alike. The evocatively named 'Trumpet of Death' (Trompette de la Mort) earns its dramatic moniker not from any sinister properties, but rather from their seasonal timing, emerging around All Saints Day, traditionally known as the "celebration of the dead" in early November.
These elusive mushrooms present a genuine challenge for foragers, as their dark colouring allows them to blend seamlessly with the decaying autumn leaves on the forest floor. Their natural camouflage makes them particularly difficult to spot, requiring experienced eyes to identify their distinctive trumpet-shaped silhouettes amongst the woodland debris.
Trompette mushrooms deliver an intensely complex flavour profile featuring deep, smoky notes complemented by rich, earthy undertones and subtle hints of hazelnut. Their concentrated flavour means a small quantity goes a remarkably long way, making them both economical and impactful in cooking. The delicate texture combined with their visually striking trumpet shape and distinctive black colouring makes them as appealing to the eye as they are to the palate.
Begin preparation by gently brushing the mushrooms clean to remove any forest debris, taking care to preserve their delicate structure. Their flavour profile closely resembles that of prized cep mushrooms, enhanced by those distinctive hazelnut undertones that develop during cooking.
For optimal results, sauté the mushrooms in small batches using a hot pan with olive oil, finishing with a touch of butter to enhance their natural richness. This simple preparation allows their complex flavour to shine without overwhelming accompaniments.
These versatile mushrooms complement game dishes superbly, where their intense, earthy flavours harmonise beautifully with venison, wild boar, and other robust meats. For extended storage, Trompette de la Mort mushrooms dry exceptionally well, preserving their intense flavour for months. Once dried, they can be reconstituted for use in soups and stews, where they impart their distinctive smoky character throughout the dish.
