Flower of Salt

The fleur de sel is the result of delicate craftsmanship and ideal weather conditions: lots of sun, sea and wind. It is on the surface of the carnations (basins of salt marshes) that this thin layer of white crystals is formed, during the evaporation of water, under the combined action of the sun and the sea breeze. If the flower of salt is not harvested, it falls during the night at the bottom of the basins then crystallizes until becoming coarse salt. It is the harvesting methods of the salt workers that determine the finesse of the fleur de sel. The gestures must be slow and precise. The fleur de sel of the Ile de Ré is not harvested, it is gathered!

Fleur de sel sublimates all the dishes of everyday life! This Charentaise salt flower is slightly pink. It has a smell similar to that of the violet and a texture reminiscent of snow.

Usage: Fleur de sel has been produced since the 15th century and is only used to flavour food. It is not, however, used in place of salt during the cooking process. Instead, it is added just before serving, as a "finishing salt," to boost the flavour of eggs, fish, meat, vegetables, chocolate, and caramel.

Next day delivery is not guaranteed so if you are ordering for a special occasion please chose delivery date a day in advance.

Saturday is a premium service and must be paid for accordingly.  If you do not pay for Saturday shipping we will despatch your order on the next working day (Monday), for delivery the following day (Tuesday).

We do not deliver on Sunday or Monday.


We send all of our shipments on an express next day courier service, usually with FedEx

For the shipping fresh and frozen goods we use high quality mixed recyclable insulated packaging to keep your products perfect through the courier network.

To keep frozen goods at the correct temperature we use a safe alternative to dry ice.  These gel packs freeze to a temperature of -45° and stay frozen for an extended period of time. Completely food safe and fully recyclable/reusable.


The vast majority of shipments arrive frozen but we cannot guarantee this.  In the event that your order has defrosted it should still be at a very low temperature when you receive it and therefore fine to put in your freezer.  Refreezing is only unsafe if the product has reached 8°c. It is worth mentioning that supermarkets routinely sell defrosted food as "fresh", with the advice that it may be frozen when you get home.

All frozen products arrive in extremely high quality, fully insulated packaging.


All fresh truffles are sent in a foil resealable pack with an absorbent paper.  This is suitable for storing in your fridge.  If storing truffles for more than a few days we recommend wrapping them in paper towel or using a Tuberpac.  Fresh truffles are always best consumed as soon as possible.
