
BEAUFORT AOP
Origin: Savoie, French Alps
Our Beaufort AOP is an exceptional raw milk cheese crafted in the high alpine pastures of Savoie. Often called the "Prince of Gruyères," this firm, pale-ivory cheese offers a complex flavour profile with distinctive notes of wildflowers, honey, and roasted hazelnuts, reflecting the rich diversity of mountain herbs consumed by the Tarentaise and Abondance cows that produce its milk.
Made according to strict AOP (Protected Designation of Origin) guidelines, Beaufort is produced only with summer or winter milk from cows grazing at high altitudes, creating seasonal variations in flavour. The cheese is pressed in traditional linen-lined wooden moulds and aged for 6-12 months, developing its characteristic smooth, dense texture and subtle crystalline crunch. Each wheel represents centuries of Alpine cheesemaking tradition.
Serve at room temperature as part of a cheese board, where it excels as a sophisticated centrepiece. Its excellent melting properties make it perfect for traditional Alpine dishes like fondue or tartiflette. Pair with crunchy baguette, dried fruits, and mountain honey to complement its nutty sweetness.
Producer: Our Beaufort comes from a small cooperative of mountain farmers who maintain traditional transhumance practices, moving their herds to higher pastures in summer. Their commitment to sustainable, small-scale production methods ensures each wheel captures the true essence of the Alpine terroir.

Orders placed before 2 PM (Monday to Friday) are dispatched the same day, unless you select a future delivery date at checkout.
Our Delivery Service
We use reliable third-party express courier services and high-quality insulated packaging. While our couriers are generally excellent, occasional delays can happen. We pack everything to stay fresh, even if transit takes a little longer.
Time-Sensitive & Event Orders
Can we guarantee delivery on a specific day? Unfortunately not - we rely on third-party couriers and can't control their schedules. All items leave us in perfect condition with good use-by dates, but final timing depends on the courier.
If your order is for a specific event, let us know in the notes section at checkout. We can often dispatch a day earlier to give you the best chance of timely arrival.
DELIVERY Changes After Dispatch
Once dispatched, your package is with the courier and we're unable to redirect it or change delivery details.
Saturday Delivery
Saturday delivery is available, though please note our couriers don't operate phone support at weekends and our office is closed. For event-critical orders, a weekday delivery gives us more flexibility to help if any issues arise.
