SAINT-HERAY
Origin: Poitou-Charentes, France
Named after its village of origin, Saint Heray is often described as the goat's milk answer to Camembert. This artisanal cheese develops a delicate white bloomy rind that encases a sumptuously creamy interior. Made from local goat's milk, it offers the perfect balance of tangy freshness and rich, buttery texture. As it ripens, the paste becomes increasingly creamy from the outside in, developing complex earthy and mushroom notes whilst maintaining that distinctive caprine tang.
The traditional production methods create a cheese that combines the best of both worlds - the elegant texture of a classic Camembert with the bright, clean flavours unique to goat's milk. Each wheel is carefully aged until it reaches the perfect balance of firm rind and flowing interior.
Remove from the fridge 30 minutes before serving to enjoy its full creaminess. Cut into wedges and serve with crusty bread, fresh pears and walnuts. Excellent baked whole with garlic and rosemary, or melted into a luxurious sauce for vegetables.
Producer: Crafted in small batches by artisan cheesemakers in Poitou-Charentes using traditional methods.
