Miller's Charcoal Wafers — ultra-thin, jet-black, hexagonal crackers made with stoneground wholemeal wheat flour and charcoal powder. The charcoal gives the wafers their striking dark colour but adds no significant flavour of its own — these are deliberately neutral, designed as a vehicle for cheese rather than a flavour in their own right. The base is 89% stoneground wholemeal flour, which gives a light, wheaty crispness, and the wafers are thin enough to snap cleanly under the weight of a piece of cheese.
The point of these is visual as much as functional. On a cheese board, the dark black of the wafer against the pale cream of a brie, the amber of a Comté, or the blue-veined ivory of a Stilton is striking. They look good, they do the job, and they stay out of the way of the cheese. There is a slight saltiness and a mild malt note from the barley, but the overall flavour profile is clean and neutral.
Handle with some care — they are deliberately thin and fragile, which is part of what makes them good but also means they can break in transit or if stacked roughly.
