SAINTE MAURE DE TOURAINE PDO
Saint Maure de Touraine PDO
Origin: Loire Valley, France
This iconic French goat's cheese is instantly recognisable by its log shape and the traditional straw running through its centre. Crafted from raw goat's milk in the Loire Valley, Saint Maure de Touraine PDO develops a delicate, wrinkled rind dusted with edible ash. The texture transforms from firm and chalky when young to increasingly creamy as it matures, whilst the flavour evolves from mild and lemony to more complex, nutty notes with a distinctive caprine tang.
The PDO status guarantees authentic production methods passed down through generations of Loire Valley cheesemakers. Each cheese is hand-ladled into moulds and aged in humid caves for a minimum of 10 days, allowing the natural rind to develop its characteristic blue-grey mould. The traditional straw serves both to support the delicate cheese and as a mark of authenticity.
Remove from the fridge 30 minutes before serving to appreciate its full flavour. Slice into rounds, keeping the rind on for added character. Perfect on a cheeseboard with fresh figs and walnuts, melted over roasted vegetables, or simply spread on crusty bread with a drizzle of honey.
Producer: Artisanal dairies in the Loire Valley follow centuries-old traditions, using milk from local herds grazing on the region's limestone-rich pastures.
